Produced seasonally from November to April, Winnimere is the wildly anticipated creation of Mateo and Andy Kehler of Jasper Hill Farms. Styled after the Swiss classic Forsterkase, Winnimere utilizes the raw Winter milk of Jasper Hill’s herd of Ayrshire cows, which is naturally high in fat and protein and ideal for its method of development.
During Winnimere’s youthful 2 month maturation the rind is regularly washed in a locally brewed lambic-style beer which produces a rosy appearance and distinct flavor. It’s edge is then wrapped in bark cut from spruce trees growing on the farm. The bark supports the walls of this delicate wheel and creates a perfect bowl-like exterior, which allows you to cut the rind from the top, exposing the perfectly viscous paste within. Winnimere is without a doubt unparalleled, and as tantalizing as bacon running naked through the woods.
