Raw organic farmstead cow milk gouda, aged 15 months
Produced below sea level from 100% organic wildflower fodder, Wilde Weide is a very different Gouda. Makers Jan and Roos inhabit the small inland island of Zwanburgerpolder and transform the raw milk of their micro-herd of Montbeliarde and Red Friesian cows into 4-6 wheels of Wilde Weide each day. After being hand-pressed by Jan and serenaded by Roos, a trained opera singer, the cheeses age for 3 months on the farm, after which they are rowed ashore (literally) and sent to the L’Amuse Affinage facility in Amsterdam to sleep for another 12 months until Betty Koster says they’re ready.
Unlike any other Gouda out there, the terroir of this cheese soars out of the golden paste: grassy, floral, bourbon-y and tart.
