BACK from its seasonal hiatus – Tomme Pe Diou is a raw farmhouse mountain tomme that we source from Caves Béarnaise. While there are many cheeses made in this style in France, very few make it to the states - this specimen is a true stunner. A thin, washed rind hides a rich moist paste redolent with sweet notes of tropical fruit and a meaty backbone. We’ll have this cheese until early 2020 – but right now you’re tasting the first batches of the season!
