Blakesville Creamery is a relative newcomer to the cheese world (2020). It comes as no surprise that their ascension to the stars has been guided by veteran cheesemaker Veronica Pedraza. Veronica is making amazing cheese with milk from the farms herd of nearly 1500 Saanen mix goats. The farm itself is pretty special as it is part of the Brico Fund which has a focus on thoughtful land use and environmental protection.
The name Shabby Shoe is an homage to a French classic, Chabichou (which is pronounced "shabby shoe"). This cheese is bright and clean, with notes of sweet cream and citrus. It features a beautiful, wrinkly geotrichum candidum rind covering this 1.8 pound wheel.
