Pecora Nocciola is Landmark’s take on a semi-aged pecorino. Aged 6-8 months in a thin layer of breathable wax, the cheese’s concentrated flavors are not mitigated by surface molds or any other secondary microbes. The “Nutty Ewe” is electric with bright tart flavors of cultured cream and sheep yogurt with a massive and lasting brown butter finish.
