Nothing elevates the rich, buttery profile of a French triple crème like a fat layer of Périgord Truffles. Cremeux des Citeaux is a collaboration between storied affineur Rodolphe Le Meunier and Fromagerie Delin. Delin is a family business based in Burgundy that has grown with its farmers, enabling them to profit from dairying properly. Essentially mini-Brilliat Savarin – these cheeses are bifurcated when they are young, stuffed with diced truffle and fresh cheese and then left to ripen, inundating the creamy paste with heady aromas and flavors of Périgord black diamonds.
