Anabasque is the flagship cheese of Landmark Creamery, the brainchild of Ana Landmark and Ana Thomas Bates.
In previous years they were roving cheesemakers – producing in borrowed space and aging in other cheesemaker’s caves. The cheese has always been good, but now that they have their own facility, well, the cheese is GREAT. Less nutty and subtle than its Pyrenean inspiration, Anabasque is packed with rich smoky flavors that cede into caramelized sweetness.
