Wm. Cofield Cheesemakers make British-inspired cheeses with great care in Sebastopol, California. In production since 2016, Cofield specializes in Clothbound Cheddar and a Stilton-inspired blue cheese, named McKinley and Bodega Blue respectively. As a cheesemaker, Keith spent a great deal of time in Minnesota making cheese at his first creamery Alemar. All Wm. Cofield cheese is made from Tresch East Dairy milk, a certified organic farm and members of the Straus Creamery family. Their cheeses are made and aged on site at in The Barlow, a community of makers and craftspeople.
