Tomme de Savoie is a cheese we hadn’t stocked in years. Like so many AOC protected cheeses, the number of mass-produced wheels far exceeds the number of artisanally produced cheeses and most of what we find on the market is the former, not the latter. UNTIL NOW.
We’ve recently began a relationship with famed affineur Joseph Paccard -- who ONLY works with farmstead producers using raw milk from small, pasture-based herds. We visited their caves in Summer 2019 and knew we had found a new partner. The quality is revelatory – cheeses are supple, savory and deeply nuanced, while remaining humble and approachable in taste.
