Timorasso Single Varietal White Wine Vinegar

How do you make the best vinegar? Start with the best wine of course. For this vinegar, Andrea Bezzechi (owner of San Giacomo), reached out to his friend Walter Massa (known as the Maestro of Timorasso for saving the grape from extinction) for his famed wine from Southeast Piedmonte. Using the slow and traditional vinegar making technique, the wine is transformed to vinegar over the course of at least 1 year in oak barrels. The product is pure, never heated, not diluted, unfiltered and thus retains and intensifies the characteristics that are found in the wine.
