Since 2008 Spring Brook Farm Cheese has been making award winning alpine style cheese from raw Jersey cow's milk. Their cheeses are produced in a very traditional manner incorporating copper vats and wood aging boards, and washing the cheeses by hand dozens of times as they age. The profits from cheese sales goes to the charity Farms For City Kids which brings urban youth out to the farm for an immersive farm experience.
