Raw cow's milk, grana style, aged 30 months minimum
Sbrinz is purported to be the Grandfather to both Gouda and Parmigiano – evidence exists of the Pope ordering wheels before the Po river valley was settled by the monks that would eventually create Grana. These wheels are made at 4400 feet above sea level by the most celebrated maker of Sbrinz in Switzerland, Andreas Gutt. He is a madman. The cheese is similarly insane: huge flavors jump out of the rocky crystalline structure of the 3-year-old paste.
