For this vinegar, Andrea Bezzechi (owner of San Giacomo) is using the slowand traditional vinegar making technique, red wine is transformed to vinegar over the course of at least 1 year in Juniper Wood barrels. The product is pure, never heated, not diluted, unfiltered and thus retains & intensifies the wood & juniper berry flavor profile. Perfect with “gamey” meat, mignonette, cocktails etc…
