Not all Pecorino Romano is created equal. In fact, “Genuine” is a term given specifically to the few wheels still traditionally produced within the countryside of Rome. This ancient DOP production stipulates that only whole sheep’s milk (rich in fat and protein) is used, from additive and hormone free regional farms, coagulated with local lamb rennet, and aged naturally in cellars. These wheels are produced by Fulvi in the village of Nepi, using milk from the Lazio region and aged for 10 months. Fulvi is a hearty, bold, full-flavored sheep’s milk cheese equally appropriate on the table as it is a cooking cheese. Unlike virtually all other Pecorino Romano in the market, Fulvi stands out in recipes, refusing to blend into the background.
