1655 Gruyère is the triumph story of a devoted relationship between Master Cheesemaker Jean-Marie Dunand and Affineur Gérald Roux. Dunand runs Fromagerie Le Crêt, an alpine village dairy that sustains 8 family farms by producing 18-20 wheels of Gruyère a day, 365 days a year. 1655 references the year Gruyere was proudly named after its region of origin in Switzerland, and to qualify for this label, each wheel is rigorously tested by an expert team that grades on a scale of up to 20 points according to condition, taste, texture, and consistency. Le Crêt’s Gruyères have a 5 year average of 19.5 points and are 1 of only 3 dairies to meet the 1655 criteria. The result is a well-aged wheel with a stone-like rind and a paste that balances nutty sweetness with roasting meat and fruity notes, spotted with tiny crystal pinpoints.
