Genuine Fontina is only made in steep-sided Val d’Aosta located in the Italian Alps near Mont Blanc and the French boarder. This DOP (Protected Designation of Origin) cheese follows a century old recipe that ensure it’s made from unpasteurized milk from only the first milking of Valdostana cows which are bovines of the Aosta race. Fontina’s concave shaped rind is iconic. Its straw-colored interior is smooth, springy and sporadically dotted with small eyes. Similar to the Italian Alps, Fontina’s sacred paste takes you through fruity peaks, nutty-mushroom valleys and is flush with complex flavors of rich mountain flora. Excellent for the cheese board and flawless when melted.
