This classic dry-cured chorizo, typical of Spain’s Navarre region, is made by Portland Oregon’s Olympic Provisions. Olympic freshly grinds sweet paprika, garlic & cayenne (never powder) and uses 100% edible hog casings that don’t need to be pealed & melt in your mouth.
