Produced by Pier Luigi Rosso, Castelrosso hails from the picturesque upper valleys of the Beilla area of Piedmont, Italy. This family run, fourth generational creamery sources milk from 40 neighboring farms who all raise the obscure breed of cow known as Simmental Oropa, which is virtually non-existent in other areas of Italy and at one point was even dangerously close to being extinct. The quality of the milk is deeply evident: the cheese crumbles, dissipates and dissolves seamlessly on the tongue. When cut, the paste drifts aroma of buttered meadows, and it’s flavor is briny, nutty and complex.
