Another winner from the Buffalo Brothers of Quattoro Portini, Casatica is a bloomy rinded soft ripened cheese made from water buffalo milk. Like all the other lactic wonders from this small farm in Bergamo, the obscurity of the cheese does not outshine its most essential quality: the milk. Bruno and his brother Alfio, slow foodists to the core, take pains in feeding their animals grasses and greens (radicchio, arugula) which produces rich, high protein milk turned fantastic cheese. Casatica is smooth and sweet yet briny with a hint of black olive. The open texture is soft, pudgy, and tenderly spreads over your palate. It’s the stuff of a curd nerds wet dreams.
