Cabra Romero is an aged yet moist semi-firm goat’s milk cheese produced by Spanish cheesemaker Don Lorenzo, with help from his secret weapon: high-in-butterfat milk of the elegant Murciana goat. Aged 2-4 months, Cabra Romero’s final days are spent being coated in heaps of fresh rosemary which is then smothered in lard, leaving this petit wheel so confusingly buttery that you’ll want to spread it. The rosemary’s fragrant aroma and woodsy flavor interfuse perfectly with the sweet paste beneath this flowery rind (which you should scrape before serving) and quickly builds from a fruity floral essence into a creamy tangy delight.
