Founded in 2002 by Mike Koch & Pablo Solanet, FireFly Farms is dedicated to traditional methods of cheese making while supporting their neighboring agri-businesses. All cheeses are made by hand, not only to stick to tradition, but also to employ people rather than machines. They are committed to humane animal husbandry and use fresh cow and goat milk from local farms that restrict the use of antibiotics, hormones, and animal feeds with chemical or synthetic fertilizers. Bonus points: instead of dumping the whey left over from the cheesemaking into the public sewer, it is refrigerated and fed to local livestock!
