Balsamela (Apple Balsamic)

Balsamela, or apple balsamic, is a traditional vinegar produced by Acetaia San Giacomo. Not to be confused with a flavored balsamic, this product is made by cooking and reducing whole apples, sourced from Alto Adige, into a thick syrup that is acidified and aged in oak barrels for up to 3 years. Think about it as the apple-based cousin of Saba!
