Asiago Fresco

Imported by the Gallo family, this young Asiago might be your new favorite cooking cheese. We’ve never stocked a young Asiago before – typically they are not that expressive as the DOP only mandates 20 days of affinage – but these wheels speak for themselves. The flavor is sweet and rich with a yogurt tang and the texture of the paste is notably moist and luscious. Excellent as part of a melting cheese mix or by itself as a singular, gooey canvas.
